Veggie Slaw with Sweet and Spicy Peanut Sauce

Slaw Ingredients
  • 1 large cucumber cut julienne
  • 1 large carrot cut julienne
  • 1 yellow pepper sliced thinly
  • 1 cabbage (white or purple) sliced thinly
  • 3 green onions chopped
  • 1/2 cup cilantro torn in to small pieces
  • 1/2 cup cashews wasabi flavored or unsalted
  • 1/8 cup roasted sesame seeds optional
Dressing Ingredients
  • 1/2 juice of a lime
  • 1/2 juice of an orange
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • 2 tbsp peanut butter
  • 2 tbsp Naked Coconuts Cocominos
  • 2 cloves garlic chopped finely
  • 1 tsp chili pepper flakes

Dressing Ingredients
  • 1/2 juice of a lime
  • 1/2 juice of an orange
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • 2 tbsp peanut butter
  • 2 tbsp Naked Coconuts Cocominos
  • 2 cloves garlic chopped finely
  • 1 tsp chili pepper flakes
Instructions
  1. Toss all the salad ingredients together in a large bowl.
  2. Whisk the dressing ingredients together until all the peanut butter is mixed smoothly.
  3. Toss the two together and serve with fresh sesame seeds!
