Spicy Veggies on Sweet Slaw and Teriyaki Mashed Potatoes

Ingredients
Mashed Potatoes
  • 4 Large Russet potatoes Chopped (about 2lbs)
  • 2 Tsps apple cider vinegar
  • 2 Tbsp Naked Coconuts Soy-Free Teriyaki: Sesame Ginger Sauce (Chili Garlic Sauce can be substituted)
  • 1 Tsp salt
  • 3/4-1 Cup almond milk
Sweet Slaw
  • 1 Head Purple cabbage
  • 4 Carrots Shredded or chopped
  • 2 Red beets Chopped or shredded
  • 3 tbsps rice vinegar
  • 1/2 Cup Naked Coconuts Soy-Free Soy Sauce
Stir Fried Veggies
  • 2 Heads Broccoli Chopped
  • 4 Heads Bok Choy Quartered lengthwise
  • 2 Cups shitake mushrooms Chopped
  • 3-4 tbsp Naked coconuts chili garlic teriyaki sauce
  • 1 tbsp Naked coconuts oil
Toppings
  • 4 green onions Chopped
  • 2 tbsps sesame seeds
  • 1 lime chopped

Mashed Potatoes
  • 4 Large Russet potatoes Chopped (about 2lbs)

  • 1 Head Purple cabbage
  • 4 Carrots Shredded or chopped
  • 2 Red beets Chopped or shredded
  • 3 tbsps rice vinegar
  • 1/2 Cup Naked Coconuts Soy-Free Soy Sauce
Stir Fried Veggies
  • 2 Heads Broccoli Chopped
  • 4 Heads Bok Choy Quartered lengthwise
  • 2 Cups shitake mushrooms Chopped
  • 3-4 tbsp Naked coconuts chili garlic teriyaki sauce
  • 1 tbsp Naked coconuts oil
Toppings
  • 4 green onions Chopped
  • 2 tbsps sesame seeds
  • 1 lime chopped
Instructions
  1. Boil a pot of water and add the potatoes (peeling them is optional)
  2. While the potatoes are boiling, heat coconut oil in a pan at medium heat and add the bok choy, broccoli, mushrooms, and any other veggies (if you’re adding any hard or dense veggies then add them beforehand, giving them more time to cook and soften)
  3. After about 5 mins when the mushrooms are soft and the broccoli is cooked but still has bite to it, add the Soy-Free Teriyaki: Chili Garlic Sauce (you want a bit of extra sauce in the pan so it can be drizzled over the potatoes)
  4. With both the potatoes and the veggies simmering on the stove, toss the chopped cabbage, carrot, and beets with the rice vinegar and Naked Coconuts Soy-Free Seasoning Sauce.
  5. When the potatoes are soft (15-20 mins), drain the water and whip or mash them with the apple cider vinegar, Soy-Free Sauce: Sesame Ginger, and salt; adding the milk as you go until it’s as thick as you prefer
  6. Scoop the mashed potatoes into the bowl, top with the sweet slaw, and then the stir-fried veggies
  7. Serve with green onion, slice of lime, and sesame seeds
