Lemon Cookies

  • 2 Cups Almond flour/meal
  • Pinch Salt
  • 1/2 Tsp Baking soda
  • 1/4 Cup coconut oil
  • 2 Tbs Coconut nectar
  • 1 Tsp Lemon zest
  • 1/4 Tsp Vanilla extract

  • 2 Cups Almond flour/meal
  • Pinch Salt
  • 1/2 Tsp Baking soda
  • 1/4 Cup coconut oil
  • 2 Tbs Coconut nectar
  • 1 Tsp Lemon zest
  • 1/4 Tsp Vanilla extract
Instructions
  1. Preheat oven to 350F and line a baking sheet with parchment paper
  2. Mix almond flour, baking soda, and salt in a food processor
  3. Add the coconut oil, coconut nectar, lemon juice and lemon zest
  4. Scoop out 1-2 tbs. of the cookie dough, roll into a ball, and press onto baking tray
  5. Bake 6-8 minutes until golden brown
  6. Let cool 20 minutes before eating
