Chocolate Chip Cookies

1 tsp. Baking soda
1 tsp. salt
1 tsp. Vanilla extract
½ cup coconut nectar
2 eggs
½ cup coconut oil (melted)
3 cups almond flour/meal
1 cup chocolate chips (for best results use Enjoy Life Mini Chocolate Chips)
Handful of crushed walnuts (optional)

1. Preheat oven to 375F and line baking sheet with parchment paper
2. Combine dry ingredients (baking soda, salt, almond meal) in a medium sized bowl
3. Combine wet ingredients (vanilla extract, eggs, coconut oil, coconut nectar) and beat with a handmixer until mixed
4. Mix wet and dry ingredients
5. Fold in chocolate chips and walnuts
6. Drop 1 tbs. Sized balls of dough on cookie sheet
7. Bake 15 minutes
